Folk must be good at food- after all, we recently won the Manchester Food & Drink Festival category for Best Casual Dining. So - we thought we'd start to share some of our secret and not-so secret recipes with you. Watch this space as we'll be updating our recipe treasure trove.
When it's cold outside, here's a real treat to keep you warm. What could be better than Folk's Marshmallow Muffins to comfort you in the cold...?
Marshmallow Muffins [to make 12]
70g butter
280g plain flour
6 tbsp cocoa powder
3 tsp baking powder
100g choc chips
55g mini marshmallows
1 egg, beaten
300ml milk
Preheat oven to gas mark 5, place paper cases into a muffin tin. Sift into a large bowl, the cocoa, flour and baking powder then stir in sugar, marshmallows and choc chips. Melt the butter, whisk together with the egg, and gently stir into your dry ingredients. Don’t over beat the batter (there should still be a few lumps of flour) or the muffins will be crusty!
Divide your mixture between the muffin cases, bake for 20-25 minutes until well risen and golden brown - then sit back and enjoy...
